Rhubarb Cake

 

Prep:  15 minutes

Cook:  50 minutes

Serves:  6 to 8

 

4 cups chopped rhubarb (about 2 “ apiece)

1 cup sugar

1 3 ounce package of strawberry flavored gelatin

1 ½ cups of water or 1 cup if using frozen rhubarb

1 package cake mix

½ cup butter or margarine

 

Lay Rhubarb in a 10” or 12” Dutch oven and sprinkle sugar and gelatin over Rhubarb.  Add water and sprinkle dry cake mix over top of Rhubarb mixture.  Add butter or margarine cut into thin slices.  Do not mix, beat or stir.  Bake at 350 degrees for 50 minutes.
